How to make a basic cheesecake
There is nothing like savoring the soft sweet taste of cheesecake. Most people have the idea that cheesecake is a very difficult dessert to make, but nothing could be farther from the truth. You do have two options when you want to make this kind of dessert — baked and unbaked. Both forms are delicious and mouth-watering.
Once you master the art of making a basic cheesecake, you can start experimenting with additions that you can include to make it seem as if you use a different recipe each time. The following instructions are for both baked and unbaked cheesecakes.
Cream cheese is the essential ingredient
Whatever way you decide to make the dessert, cream cheese is the essential ingredient. It needs to be soft and pliable to start with so that you can cream it by beating and smoothing it out in a bowl using the back of a spoon.
Recipe for baked cheesecake
The bottom portion of the cheesecake can be a mixture of graham wafer crumbs and butter or you can save yourelf time by using a ready-made graham wafer pie crust.
Crust recipe for an 9-inch cheesecake:
1 1/2 cups of graham wafer crumbs
1/2 cup butter
Mix the butter with the crumbs with your hands until all the butter is combined with the crumbs. Pat this into a 9-inch pie plate making sure that you press the mixture up the sides of the plate.
1 250g pkg. of cream cheese (softened)
1/2 cup of sugar
2 beaten eggs
1 tsp. vanilla extract
Beat the cream cheese and sugar together until you have a smooth mixture. Add in the beaten eggs and stir until they are well-blended. Lastly, add the vanilla extract and stir the mixture.
Pour the mixture into the graham wafer bottom that you choose and bake at 350 degrees for 40 minutes.
Let the cheesecake cool for two hours before adding the topping of your choice.
Recipe for unbaked cheesecake
Prepare a crust using 2 cups of graham wafer crumbs, 4 tbsp. sugar and 1/2 cup of butter. Use your hands to add the ingredients together and pat the mixture into a 9 X 13 pan.
Use an electric mixer to prepare one envelope of Dream Whip according to the instructions on the package or whip up one small carton of Nutriwhip. You can also use whatever brand of whipped cream mix that you are familiar with.
Add 1 cup of icing sugar to the mixture and beat well until all the dry icing sugar is blended.
Cut one 250g pkg of cream cheese (softened) into cubes and add to the whipped cream. Beat this on high speed until it is thoroughly mixed.
Spread the cream cheese mixture over the graham wafer crumb bottom.
Then you can add whatever topping you desire — blueberry pie filling, cherry pie filling, crushed pineapple (drained) or your favorite jam.
Place the pan in the refrigerator overnight so that it will set well.
Serve the cheesecake
The baked cheesecake is best served cut in small wedges. You can add a topping of your choice or just drizzle sundae topping over each piece as you serve it.
